Low Carb Avocado Gazpacho
High in fiber and low in carbs, this cool and refreshing avocado gazpacho is super creamy.

Ingredients
- 1 large ripe avocado
- ¼ cup chopped red onion
- 4 garlic cloves, chopped
- 1 ½ pounds ripe tomatoes, peeled, chopped
- 2 tablespoons fresh lime juice
- 2 tablespoons extra virgin olive oil
- 1 teaspoon sweet paprika
- 1 cup ice water
- Sea salt & ground pepper
For the garnishes
- 1 hard-boiled egg, finely chopped
- 1 cup chopped tomato
- 1 cup chopped cucumber
- 1 cup chopped green pepper
- ½ cup chopped fresh basil
Directions
In a blender, blend together avocado, onion, garlic, tomatoes, lime juice, olive oil, paprika, salt and pepper until smooth. Transfer to a bowl and thin it out with iced water; chill, covered, for several hours.
Place the garnishes in a bowl and serve with avocado gazpacho.
